28 oz meatless spaghetti sauce

uncooked lasagna noodles

15 oz fat-free ricotta cheese

cup
mushrooms
chopped
½
cup
zucchini
chopped
½
cup
onion
chopped
½
cup
bell pepper
chopped

low-fat mozzarella cheese
Instructions
Preheat oven to 375°
Prepare an 11x7 baking dish by spraying with non-stick cooking spray.
Add ⅓ of the spaghetti sauce to the bottom of the baking dish. Spread to an even layer using the back of a spoon.
Place 3 noodles in a single layer on top of the sauce.
Spread ⅓ of the spaghetti sauce on top of the noodles.
Spread all of the riccota cheese on top of the sauce, then all of the vegetables.
Add ½ of the mozzarella cheese on top.
Top with the last 3 lasagna noodles, then the rest of the sauce.
Cover baking dish with aluminum foil.
Bake in preheated oven for 1 hour.
Remove the aluminum foil, sprinkle the rest of the mozzarella cheese on top and bake for an additional 5 minutes.
Remove from oven and let stand for 5 minutes before you cut it.
