sour cream

heavy cream

penne pasta

fresh parsley

Romano cheese
shredded
Instructions
In a large skillet over medium heat melt butter.
Add garlic and onions and saute until soft, but not yet brown.
Add pumpkin puree and whisk in chicken broth, sour cream, heavy cream, nutmeg, salt, and white pepper.
Simmer, reducing heat if needed, for 10 minutes, stirring often.
In the meantime, in a large saucepan, bring salted water to a boil and cook pasta to al dente, according to package directions.
Using a colander, drain water off pasta.
Add pasta to pumpkin mixture, stir in, and simmer 2 to 3 minutes, or until sauce has thickened.
Stir in parsley.
To serve, garnish with Romano cheese.
Notes
If you don't have Penne Pasta, you can substitute with
Mostaccioli
Rigatoni
Ziti
Elbow Macaroni, but larger tube pasta is better because it will hold more sauce.
