Place the eggs in a medium saucepan and cover with cold water.
Bring the water to a boil over high heat.
Remove the saucepan from the heat as soon as the water boils. Cover the saucepan and let the eggs stand in the hot water for 10 to 12 minutes.
Remove the eggs from the water and cool the eggs completely.
Peel the eggs. Slice each egg in half lengthwise.
Remove the yolks and place them in a medium bowl.
Add the chopped celery, chopped onion, mayonnaise, to the bowl.
Mash the mixture with a fork until smooth.
Add salt and hot pepper sauce to taste. Mix well.
Spoon the yolk mixture into the egg white halves.
Sprinkle paprika over the filled eggs.
Cover and chill in the refrigerator until ready to serve.
