Instructions
For the Sauce:
In a small bowl, add mayonnaise, horseradish, ketchup, ¼ tsp salt, paprika, a dash of cayenne pepper, and a dash of pepper .
Stir everything together until well mixed.
Put the bowl in the refrigerator.
For the Blooming Onion:
In a large bowl, beat an egg
Pour milk into the same bowl with the egg.
In another bowl, mix together flour, salt, cayenne pepper, black pepper, garlic powder, thyme, oregano, and cumin.
Prepare the onion by cutting off about 3/4 to 1 inch from the top and bottom.
Remove the skin from the onion.
Take out the core from the middle of the onion (around 1 inch in diameter).
Use a sharp knife to slice down the center of the onion, stopping about 3/4 of the way down.
Turn the onion 90 degrees and slice again.
Continue slicing the sections in half, but be careful not to cut through the bottom. You should have 16 sections.
Spread the petals of the onion apart to make it easier to coat.
Optional: If you want, soak the onion in an ice bath for an hour to make it easier to "bloom."
Dip the onion into the milk mixture.
Coat the onion well with the flour mixture.
Separate the petals and sprinkle the flour mixture between them.
Once all the petals are coated, dip the onion into the milk mixture again.
Coat the onion with the flour mixture once more.
Put the coated onion in the refrigerator for at least 15 minutes.
While the onion is chilling, preheat the oil in a deep fryer or deep pot. Set the temperature to 350 degrees F (175 degrees C).
Carefully place the onion in the hot oil, making sure it's right side up.
Fry the onion for about 10 minutes or until it turns golden brown.
Take the onion out of the oil and let it drain on a rack or paper towels.
Open up the center of the onion so you can place the small bowl of dipping sauce inside.
