(9 inch) pie crusts

whole milk

sugar

all-purpose flour

salt

egg yolks
slightly beaten
2
tablespoon
butter
1
teaspoon
vanilla extract
bananas
as needed
Instructions
Prepare a 9 inch baked pie crust. Set aside for later.
In a large saucepan, heat milk until just before boiling.
In another saucepan, combine sugar, flour, and salt.
Slowly stir the hot milk into the sugar mixture.
Cook over medium heat, stirring constantly, until thickened.
Cover and cook for 2 more minutes, stirring occasionally.
In a small bowl, beat egg yolks slightly.
Stir a little of the hot mixture into the yolks.
Return the yolk mixture to the saucepan and stir well.
Cook for 1 more minute, stirring constantly.
Remove from heat and stir in butter and vanilla.
Let filling cool until lukewarm.
Slice bananas and place in the pie shell.
Pour the warm filling over the bananas
Cool completely before serving. Add whipped cream or meringue if desired.
