pork tenderloin
cut into ½ inch cubes

can
(19 ounce) black beans
drained and rinsed

water

chicken broth

chorizo sausages
cut into ½ inch thick pieces

bay leaves
salt
to tatse
ground black pepper
to taste
Instructions
Heat 1 tablespoon of vegetable oil in a skillet over medium heat.
Add garlic and onion to the skillet. Cook until the onion becomes soft and clear.
Take the onion out of the skillet and place it into a saucepan.
Add another tablespoon of vegetable oil to the skillet. Turn the heat to medium-high.
Place cubed pork in the skillet. Cook until it's well browned.
In a blender, combine ¾ of the black beans and ¼ cup of water. Pulse until the beans are finely chopped but not completely smooth.
Pour the whole beans and the bean puree from the blender into the saucepan.
Add the pork cubes, chicken stock, chorizo, and bay leaves to the saucepan.
Turn the heat to medium-high and bring everything to a boil.
Once boiling, reduce the heat to medium-low. Cover the saucepan and let it simmer for 30 minutes.
Season with salt and pepper to your liking before serving.
