butternut squash
peeled, seeded, cubed
parmesan cheese
garnish
Instructions
In a large stockpot, add olive oil, onion, and garlic.
Place stockpot over medium heat.
Saute onion and garlic for 3 to 4 minutes.
Add chicken broth, salt, pepper, sage, and butternut squash.
Bring to a boil, stirring occasionally, reduce heat and simmer for approximately 20 minutes or until the butternut squash is tender.
In a blender or food processor, add ½ of the mixture and puree lightly, there will still be chunks of squash. Repeat for the other half.
To serve, garnish with parmesan cheese.
