Instructions
 

  • In a large stockpot, add olive oil, onion, and garlic.
  • Place stockpot over medium heat.
  • Saute onion and garlic for 3 to 4 minutes.
  • Add chicken broth, salt, pepper, sage, and butternut squash.
  • Bring to a boil, stirring occasionally, reduce heat and simmer for approximately 20 minutes or until the butternut squash is tender.
  • In a blender or food processor, add ½ of the mixture and puree lightly, there will still be chunks of squash. Repeat for the other half.
  • To serve, garnish with parmesan cheese.
