Easy Butternut Squash Soup
Equipment
Ingredients
- 1 tsp olive oil
- ½ onion chopped
- 1 clove garlic minced
- 3 cups fat-free chicken broth
- ½ tsp salt
- ⅛ tsp ground black pepper
- 1 tsp fresh sage chopped
- 1½ lbs butternut squash peeled, seeded, cubed
- parmesan cheese garnish
Instructions
- In a large stockpot, add olive oil, onion, and garlic.
- Place stockpot over medium heat.
- Saute onion and garlic for 3 to 4 minutes.
- Add chicken broth, salt, pepper, sage, and butternut squash.
- Bring to a boil, stirring occasionally, reduce heat and simmer for approximately 20 minutes or until the butternut squash is tender.
- In a blender or food processor, add ½ of the mixture and puree lightly, there will still be chunks of squash. Repeat for the other half.
- To serve, garnish with parmesan cheese.
