Preheat the oven to 400 degrees F (200 degrees C).
In a small bowl, using a whisk, mix together the flour, baking powder, and salt. Set it aside.
In a large bowl, crack the eggs and beat them until they become smooth.
Slowly add the flour mixture to the eggs and keep mixing until there are no lumps.
Add the Colby-Monterey Jack cheese, cottage cheese, spinach, green chiles, and melted butter to the mixture. Stir it all together until everything is mixed evenly.
Place half of the mixture on each of the pie crusts.
Put the quiches in the preheated oven and bake them for 15 minutes at 400 degrees F (200 degrees C).
After 15 minutes, lower the temperature to 350 degrees F (175 degrees C).
Keep baking the quiches until they turn a light brown color and a knife inserted into the center comes out clean. It will take about 35 to 40 minutes.
