Colcannon (Irish Mashed Potatoes): Discover the joy of this classic Irish side dish. Perfect for St Patrick's Day, it's a tasty mix of potatoes, cabbage, and bacon.
Place potatoes in a saucepan and cover them with water.
Heat until the water boils, then let the potatoes cook until they're soft, about 15 to 20 minutes. Afterward, drain the water.
While the potatoes are boiling, cook the bacon in a large skillet over medium-high heat. Turn the bacon occasionally until it's evenly browned, which should take around 10 minutes.
Move the bacon to paper towels to drain off the excess grease. Once it's cooled, crumble the bacon into small pieces and keep it aside.
Keep the bacon grease in the skillet. Use it to cook the cabbage and onion over medium heat until they're soft and translucent, about 10 to 15 minutes. You can cover the skillet to make this go faster. Then, remove the skillet from the heat.
In a large bowl, mash the cooked potatoes. Add milk to the mashed potatoes and season with salt and pepper to taste.
Gently mix in the crumbled bacon, cooked cabbage, and onion into the mashed potatoes.
Transfer this mixture into a large serving bowl.
Drizzle melted butter over the top and sprinkle with some of the crumbled bacon.
