Instructions
Preheat the oven to 350°F.
Heat a large skillet over medium heat.
Add the ground turkey and cook, stirring to break it up, until browned.
Drain the skillet if there is excess liquid.
Stir in the taco seasoning, onion, tomato sauce, and salsa
Simmer for 5 to 7 minutes, stirring occasionally.
In a small bowl, mix the cottage cheese and egg substitute until smooth.
Lightly spray a 9x13 inch baking dish with cooking spray.
Spread ½ of the turkey mixture in the baking dish.
Arrange 4 corn tortillas in a single layer over the meat.
Spread ½ of the cottage cheese mixture over the tortillas.
Sprinkle ½ of the Monterey Jack and ½ of the Cheddar over the cottage layer.
Add the remaining turkey mixture in an even layer.
Arrange the remaining 4 tortillas on top.
Spread the remaining cottage cheese mixture over the tortillas.
Sprinkle the remaining Monterey Jack and Cheddar evenly over the top.
Bake for 25 minutes, until the edges are bubbly and the cheese is melted.
Remove from the oven and let stand for 10 minutes before slicing and serving.

Serving Suggestions
Serve with chopped cilantro, sliced green onions, and a squeeze of lime.
Add a side of black beans or a simple corn salad for a complete plate.
Offer sour cream or Greek yogurt and extra salsa at the table.
Pair with a crisp green salad and tortilla chips for crunch.
How to Store and Reheat
Store:
Cover and refrigerate leftovers for up to 4 days.
Freeze:
Wrap tightly in portions and freeze for up to 2 months. Thaw in the refrigerator.
Reheat (Oven):
Cover with foil and warm at 325°F until heated through, about 15 to 20 minutes.
Reheat (Microwave):
Heat single slices on medium power in short intervals to keep the layers from drying out.
