crushed cornflakes cereal

vanilla extract

egg whites

vegetable oil for frying
Instructions
Scoop ice cream into eight ½-cup-sized balls.
Place the ice cream balls on a baking sheet.
Freeze the ice cream balls until firm, about 1 hour.
In a shallow dish, combine the crushed cornflakes cereal.
In a separate bowl, beat the egg whites until foamy.
Roll each ice cream ball in the egg whites, then roll in the crushed cornflakes, covering the ice cream completely.
Repeat the rolling process if necessary to fully coat the ice cream balls.
Freeze the coated ice cream balls until firm, about 3 hours.
Heat the vegetable oil in a large, heavy saucepan to 375 degrees F (190 degrees C).
Using a slotted spoon, fry 1 or 2 ice cream balls at a time in the hot oil until golden, 10 to 15 seconds.
Drain the fried ice cream balls quickly on paper towels.
Serve immediately.
