Instructions
Preheat your oven to 375° F
Place beaten eggs into a shallow dish.
In another shallow dish, mix together the grated Parmesan cheese and Italian seasoned breadcrumbs.
Dip each chicken breast first into the eggs, then into the breadcrumb mixture, making sure each piece is well coated.
Heat vegetable oil in a large skillet over medium-high heat.
Add the chicken to the skillet and cook for about 8 to 10 minutes on each side, or until the chicken is fully cooked and the juices run clear.
Spread pasta sauce in a lightly greased 9x13 inch baking dish.
Place the cooked chicken in the dish.
Place a slice of Monterey Jack cheese over each chicken breast.
Bake in the preheated oven for 20 minutes, or until the cheese has melted completely.
