Bacon Wrapped Pork Tenderloin
Ingredients
- non-stick cooking spray
- ½ cup brown sugar
- ¼ cup apple juice
- 1 tbsp brown spicy mustard
- 1 dash cinnamon
- 2 lbs pork tenderloin
- 2 tsp poultry seasoning
- 6 sliced bacon
Instructions
For the Glaze
- In a saucepan, add brown sugar, apple juice, spicy mustard, and cinnamon.
- Over medium/high heat, cook and stir until it comes to a boil
- Remove from heat and set aside for later
For the Pork
- Preheat oven to 400° F
- Prepare a 9×13 baking dish by lining with aluminum foil, and spraying foil with non-stick cooking spray.
- Trim the fat off of pork.
- Rub the pork with the poultry seasoning.
- Wrap the pork with the bacon.
- Place the pork in the prepared baking dish.
- In preheated oven, bake for 30 – 40 minutes or until instant-read thermometer inserted in the thickest area of the pork reads 150°
- Brush the pork with the prepared glaze generously.
- Bake additional 10 minutes or until the instant-read thermometer reads 160°
- Remove from oven and let rest for 5 minutes before cutting.
