For the Glaze

  • In a saucepan, add brown sugar, apple juice, spicy mustard, and cinnamon.
  • Over medium/high heat, cook and stir until it comes to a boil
  • Remove from heat and set aside for later

For the Pork

  • Preheat oven to 400° F
  • Prepare a 9×13 baking dish by lining with aluminum foil, and spraying foil with non-stick cooking spray.
  • Trim the fat off of pork.
  • Rub the pork with the poultry seasoning.
  • Wrap the pork with the bacon.
  • Place the pork in the prepared baking dish.
  • In preheated oven, bake for 30 – 40 minutes or until instant-read thermometer inserted in the thickest area of the pork reads 150°
  • Brush the pork with the prepared glaze generously.
  • Bake additional 10 minutes or until the instant-read thermometer reads 160°
  • Remove from oven and let rest for 5 minutes before cutting.
