Chicken Waldorf Salad
Ingredients
- ½ cup chopped walnuts
- 1 cup seedless red grapes halved
- ½ Granny Smith apple cored and cubed
- ¼ cup chopped red onion
- ½ cup dried cranberries
- 2 cooked rotisserie chicken breasts cubed
- ½ cup vanilla yogurt
- ½ cup mayonnaise
- 2 teaspoons lemon juice
Instructions
- Preheat the oven at 325° F
- On a baking sheet, place walnuts and spread to a single layer.
- In preheated oven, roast walnuts for 3 to 5 minutes or until browned and fragrant.
- Set aside to cool.
- In a salad bowl, add grapes, apple, red onion, cranberries, walnuts, and chicken. Toss lightly.
- In a mixing bowl, add yogurt, mayonnaise, and lemon juice.
- Using a wire whisk, whisk dressing to mix well.
- Pour the prepared yogurt dressing over the salad and toss to coat.
