Double Chocolate Zucchini Cake
- ½ cup butter
- 1¾ cup sugar
- ½ cup vegetable oil
- 2 large eggs
- ½ cup buttermilk
- 1 tsp vanilla extract
- 2½ cups all-purpose flour
- ¼ cup cocoa powder
- 1 tsp salt
- 1 tsp baking soda
- ½ tsp ground cinnamon
- 2 cups fresh zucchini grated
- ½ cup chopped walnuts
- ¾ cup chocolate chips
- powdered sugar (optional)
- Preheat oven to 325° F
- Prepare a 9×13 baking pan by greasing and flouring.
- In a stand mixer or a large mixing bowl with a hand mixer, cream together butter, sugar, and vegetable oil.
- Add eggs one at a time, buttermilk, vanilla, flour, cocoa powder, salt, baking soda, cinnamon, and zucchini. Beat on LOW to combine.
- By hand, fold in chopped walnuts and chocolate chips.
- In the prepared baking pan, add the batter. Spread to an even layer
- In preheated oven, bake approximately 1 hour or until a toothpick inserted in the center comes out clean.
- Place cake pan on a cooling rack to cool.
- When cooled, sprinkle with powdered sugar.
