Ingredients
  

  • ½ cup bacon diced
  • 4 medium potatoes peeled and chopped
  • 1 medium onion chopped
  • 3 cups cream-style corn
  • 2 cups water
  • salt to taste
  • ground black pepper to taste
  • 2 cups half-and-half

Instructions
 

  • Cook the bacon in a large pot on medium-high heat until it becomes crispy. This will take about 5 to 7 minutes. Leave the bacon and about 2 tablespoons of the grease in the pot.
  • Add the potatoes and onion to the pot. Stir them occasionally and cook for 5 minutes.
  • Add the corn, water, salt, and pepper to the pot. Turn up the heat and bring everything to a boil.
  • Once it's boiling, lower the heat to low, cover the pot, and simmer. Stir it every so often. Let it simmer until the potatoes become tender, which should be around 20 minutes.
  • While that's simmering, put the half-and-half in a small saucepan. Heat it until you see it bubbling, but remove it from the heat just before it boils.
  • Mix the heated half-and-half into the chowder.
  • Serve immediately
