Tips and Tricks

Perfecting the Roux

To avoid lumps, make sure you whisk the flour and butter mixture constantly. Adding the milk slowly while whisking will also help create a smooth base for your soup.

Enhancing the Flavor

For an extra burst of flavor, sauté the onions until they are caramelized. This adds a deep, rich taste to the soup.

Cooking Vegetables Evenly

Cut the vegetables into uniform sizes to ensure they cook evenly. This way, you won’t end up with some pieces being overcooked while others are undercooked.

Melting Cheese Smoothly

To prevent the cheese from clumping or becoming grainy, make sure to shred it finely and add it gradually to the soup, stirring continuously.

Adjusting Thickness

If the soup is too thick for your liking, gradually add more chicken stock or milk until you reach the desired consistency. If it’s too thin, let it simmer a bit longer to reduce and thicken.

Adding a Creamy Touch

For an extra creamy texture, consider blending a portion of the soup and then mixing it back into the pot. This also helps to thicken the soup without adding extra flour.

  • 1 tablespoon butter
  • ½ onion chopped
  • ¼ cup melted butter
  • ¼ cup flour
  • 2 cups milk
  • 2 cups chicken stock
  • cups broccoli florets coarsely chopped
  • 1 cup carrots matchstick-cut
  • 1 stalk celery thinly sliced
  • cups shredded sharp Cheddar cheese
  • salt to taste
  • ground black pepper to taste

  • Place 1 tablespoon of butter in a skillet over medium-high heat until it melts.
  • Add the onion and cook and stir it for about 5 minutes until it becomes tender and see-through. Set it aside.
  • In a large saucepan, mix ¼ cup of melted butter and flour together over medium-low heat. Keep whisking and cooking for 3 to 4 minutes. If needed, add 1 to 2 tablespoons of milk to prevent the flour from burning.
  • Gradually pour in milk while whisking all the time. Also, add chicken stock and bring it to a simmer. Cook for about 20 minutes until the mixture thickens.
  • Add broccoli, carrots, celery, and the sautéed onion. Simmer until all the vegetables become tender, which should take about 15 minutes.
  • Stir in Cheddar cheese until it melts. Season with salt and pepper according to your taste before serving.
