  • In a large skillet over medium heat melt butter.
  • Add garlic and onions and saute until soft, but not yet brown.
  • Add pumpkin puree and whisk in chicken broth, sour cream, heavy cream, nutmeg, salt, and white pepper.
  • Simmer, reducing heat if needed, for 10 minutes, stirring often.
  • In the meantime, in a large saucepan, bring salted water to a boil and cook pasta to al dente, according to package directions.
  • Using a colander, drain water off pasta.
  • Add pasta to pumpkin mixture, stir in, and simmer 2 to 3 minutes, or until sauce has thickened.
  • Stir in parsley.
  • To serve, garnish with Romano cheese.
