Savory Pumpkin Penne Pasta
Ingredients
- 1 small onion finely chopped
- 2 cloves garlic minced
- 2 tbsp butter
- 2 cups pumpkin puree
- 2 cups chicken broth
- ½ cup sour cream
- ¼ cup heavy cream
- ¼ tsp nutmeg
- 1 tsp salt
- ¼ tsp white pepper
- 1 lb penne pasta
- 2 tbsp fresh parsley minced
- ¼ cup Romano cheese shredded
Instructions
- In a large skillet over medium heat melt butter.
- Add garlic and onions and saute until soft, but not yet brown.
- Add pumpkin puree and whisk in chicken broth, sour cream, heavy cream, nutmeg, salt, and white pepper.
- Simmer, reducing heat if needed, for 10 minutes, stirring often.
- In the meantime, in a large saucepan, bring salted water to a boil and cook pasta to al dente, according to package directions.
- Using a colander, drain water off pasta.
- Add pasta to pumpkin mixture, stir in, and simmer 2 to 3 minutes, or until sauce has thickened.
- Stir in parsley.
- To serve, garnish with Romano cheese.
