A quick and easy kid-friendly dinner, or lunch recipe made with elbow macaroni, butter, all-purpose flour, salt, ground black pepper, milk, and shredded Cheddar cheese.

Ready in just 30 minutes this makes a great option for busy times. This comfort food will warm you on a cold Fall or Winter night. No need to turn on the oven for this classic dish.

Ingredients you will need

  • 16 oz elbow macaroni
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • ½ tsp salt
  • dash ground black pepper
  • 2 cups milk warmed
  • 2 cups (8oz) shredded Cheddar cheese or more to taste

    Tip: You can use any type of Cheddar cheese you like. I prefer extra sharp cheese when I make Macaroni and Cheese because I like the bite it gives, but you can use a milder cheddar cheese if that’s what you like.

How to make

  1. Prepare macaroni noodles as directed on the package.
  2. In the meantime, place a medium saucepan over medium heat.
  3. Add butter and melt.
  4. Using a whisk, stir in the flour, stirring for 3 – 5 minutes to make a roux.
  5. Stir in salt and pepper.
  6. Add milk a little at a time stirring well in between.
  7. Stir constant and cook until bubbling.
  8. Add cheese a little at a time stirring well in between.
  9. Stir and cook until cheese has melted.
  10. In a colander, drain water off of macaroni.
  11. Add macaroni into the cheese mixture and stir to coat evenly and well.
  12. Serve immediately.
