Copycat Taco Bell Chicken Quesadillas
Ingredients
Sauce
- ¼ cup mayonnaise
- minced jalapeno pepper to taste
- ¾ teaspoon sugar
- ½ teaspoon paprika
- ½ teaspoon ground cumin
- ⅛ teaspoon garlic powder
- ⅛ teaspoon cayenne pepper
- dash salt
Quesadillas
- 4 flour tortillas
- 4 chicken tenders
- 1 cup shredded Cheddar cheese
- 2 sliced American cheese
Instructions
For the Sauce:
- In a medium-sized mixing bowl, add ¼ cup of mayonnaise.
- Add minced jalapeno pepper, ¾ teaspoon of sugar, ½ teaspoon of ground cumin, ½ teaspoon of paprika, ⅛ teaspoon of cayenne pepper, ⅛ teaspoon of garlic powder, and a dash of salt.
- Using a wire whisk, mix well until smooth.
- Set the sauce aside.
For the Quesadillas
- Grill 4 chicken tenders.
- Cut the grilled chicken into thin slices.
- Preheat a skillet over medium heat.
- Place one flour tortilla in the hot skillet.
- Sprinkle ¼ cup of shredded Cheddar cheese on one side of the tortilla.
- Place ½ slice of American cheese on top of the shredded cheese
- Arrange ¼ cup of chicken slices over the cheese.
- Spread about one tablespoon of sauce on the empty side of the tortilla.
- Fold the tortilla over and press gently with a spatula.
- Cook until the cheese is melted.
- Remove from the skillet and cut into 4 pieces.
- Repeat steps 4-11 for the remaining tortillas.
