Easy Irish Soda Bread Cookies
Ingredients
- 2 cups all-purpose flour
- ¾ cup sugar
- ½ teaspoon baking soda
- ½ cup dried currents (or dried fruit of your choice)
- ¼ cup buttermilk
- 1 egg
- ¼ teaspoon salt
- 1 teaspoon caraway seeds
Instructions
- Heat your oven to 350° F
- Line two large baking sheets with parchment paper.
- In a large mixing bowl, combine flour, sugar, baking soda, salt, and caraway.
- Use a pastry blender to mix in the butter until it looks like coarse crumbs.
- Add currants to the bowl and stir.
- Put in the beaten egg.
- Pour in buttermilk and use a fork to combine everything into a soft dough. If it's too dry, add a bit more buttermilk.
- Sprinkle some flour on your work surface and place the dough on it.
- Shape the dough into a ball and gently knead it 5 or 6 times.
- Roll the dough until it's ¼ inch thick.
- Use a knife to cut the dough into squares and triangles.
- Place the cookies on the baking sheets you prepared earlier.
- Bake in the oven for 12 to 14 minutes, or until they are slightly browned.
