Ingredients
  

  • 1 package (8½ ounce) 8-inch flour tortillas
  • 1 pound ground beef
  • 8 ounces taco seasoning
  • 1 can (10 ounces) diced tomatoes with green chile peppers
  • 1 can (10 ounces) enchilada sauce
  • 1 can (15 ounce) refried beans warmed
  • 1 package (8 ounce) Mexican blend cheese
  • 2 green onions chopped

Instructions
 

  • Cook ground beef according to the taco seasoning package directions.
  • Heat a small amount of oil in a skillet to 375°F.
  • Place a flour tortilla in the skillet and cook for 30-45 seconds until golden brown.
  • Drain the tortilla on paper towels.
  • Repeat steps 3 and 4 for each tortilla.
  • Place a tortilla on a flat surface.
  • Spread a thin layer of warm refried beans on the tortilla.
  • Add a layer of the cooked taco meat mixture on top of the beans.
  • Place another tortilla on top of the meat mixture.
  • Pour enchilada sauce over the top tortilla.
  • Sprinkle diced tomatoes and green chiles over the sauce.

  • Sprinkle chopped green onions on top of the cheese.
