Tips and Tricks

Preparing Potatoes

Peeling and Cutting: Make sure to peel and cut the potatoes into even-sized pieces. This ensures they cook evenly and makes mashing easier.

Boiling Potatoes

Salt the Water: Adding salt to the water not only seasons the potatoes but also helps them cook more quickly.

Mashing Techniques

Use a Potato Masher: A potato masher works best for achieving a smooth texture. If you prefer extra smooth potatoes, consider using a ricer.

Heating Milk

Warm Milk: Heating the milk before adding it to the potatoes helps keep the mixture warm and blends more smoothly. This also allows the flavors of the green onions to infuse into the milk.

Adding Butter

Room Temperature Butter: Use butter that’s at room temperature to ensure it melts quickly and mixes evenly into the potatoes.

Seasoning

Taste as You Go: Add salt and pepper gradually, tasting the potatoes as you go. This helps you avoid over-seasoning.

Serving Suggestions

Keep Warm: If you’re not serving the mashed potatoes immediately, keep them warm in a covered dish in a low oven (around 200°F) to maintain their smooth and creamy texture.

  • 1 bunch green onions thinly sliced
  • ¼ cup butter cut into pieces
  • salt to taste
  • fresh ground black pepper to taste

Instructions

  • Place potatoes in a large pot and cover them with salted water. Bring the water to a boil.
  • Turn the heat down to medium-low and let the potatoes simmer until they're soft, which should take about 20 minutes.
  • Drain the water from the potatoes and then put them back in the pot. Cover them with a clean dish towel.
  • Set the pot on the stove over very low heat to let the potatoes dry out for 2 to 3 minutes.
  • While the potatoes are drying, put the milk and green onion in a small saucepan. Heat them over medium-low heat until warm, about 3 to 4 minutes.

  • Mix the warm milk and green onion into the mashed potatoes until everything is well combined.
  • Add pepper to taste.
