  • Preheat oven to 350° F.
  • In a skillet over medium heat, cook and stir ground beef with onion until meat is crumbly and no longer pink. This should take about 10 minutes.
  • Drain any excess grease from the skillet.
  • Stir in 1 cup of Cheddar cheese, sour cream, parsley, taco seasoning, oregano, and black pepper into the ground beef until cheese has melted.
  • Add enchilada sauce, chili powder, garlic, and salt to the beef mixture. Bring to a simmer and then reduce heat to low. Simmer until meat sauce is slightly thickened, which should take about 5 minutes.
  • Lay a tortilla on a work surface and spoon about 1/4 cup of meat sauce down the center of the tortilla.
  • Top the meat sauce with 1 tablespoon of black beans and a sprinkling of black olives.
  • Roll the tortilla up, enclosing the filling, and lay seam-side down into a 9×13-inch baking dish.
  • Repeat steps 6-8 with the remaining tortillas.
  • Spoon any remaining meat sauce over the enchiladas and scatter any remaining black beans and black olives over the top.
  • Sprinkle 1/4 cup of Cheddar cheese over the tortillas.
  • Bake in the preheated oven until cheese topping is melted and enchiladas and sauce are bubbling. This should take about 20-22 minutes.
  • Once cooked, remove from the oven and let stand for 5 minutes before serving.
