Irish Cream Truffle Chocolate Fudge
Ingredients
- 3 cups semisweet chocolate chips
- 1 cup white chocolate chips
- ¼ cup butter
- 3 cups powdered sugar
- 1 cup Irish cream liqueur
- 1½ cup chopped walnuts
Topping:
- 1 cup semisweet chocolate chips
- ½ cup white chocolate chips
- 4 tablespoon Irish cream liqueur
- 2 tablespoon butter
Instructions
- Butter an 8×8 inch pan to prepare it for use.
- Place 3 cups of semisweet chocolate chips, 1 cup of white chocolate chips, and ¼ cup of butter in the top part of a double boiler. Heat them until they're soft enough to stir.
- Add in the powdered sugar and Irish cream, stirring until the mixture becomes smooth.
- Mix in the nuts. Then, transfer this mixture into the pan you prepared earlier.
- Lay a sheet of plastic wrap over the top of the mixture in the pan. Press down and smooth out the top.
- In the same top part of the double boiler, melt the remaining chocolates until they're soft.
- Take it off the heat. Now, using a fork, beat in the butter and Irish cream until everything is smooth.
- Use a knife to spread this topping over the cooled fudge. If you want the top to be extra smooth, you can cover it with plastic wrap again.
- Refrigerate the fudge until it's firm, which should take about 1 to 2 hours. If you want, you can also freeze it for later.

Tips and Tricks
Use High-Quality Chocolate: Opt for good quality chocolate chips for a richer, more decadent flavor. The better the chocolate, the more delicious your fudge will be.
Smooth Chocolate Melting: To avoid scorching the chocolate in your double boiler, make sure the water is simmering, not boiling. Stir frequently to ensure even melting and a smooth texture.
Sift Your Sugar: For an even smoother fudge, sift the powdered sugar before adding it to the melted chocolate. This prevents any lumpy bits in your fudge and ensures a silky consistency.
Customize Your Nuts: Toast the walnuts lightly before adding them to the mixture. Toasting enhances their flavor and adds a delightful crunch that contrasts nicely with the soft fudge.
Add a Pinch of Salt: A small pinch of salt can greatly enhance the flavors of your fudge. It helps in balancing the sweetness and bringing out the rich chocolate and creamy liqueur flavors.
Experiment with Toppings: Before the fudge sets, sprinkle some crushed nuts, sea salt, or even a swirl of caramel on top for an extra layer of texture and flavor.
Cutting Perfect Pieces: For clean, sharp cuts, heat your knife with hot water and wipe it dry before slicing through the fudge. This method melts through the chocolate smoothly, creating perfect pieces.
Storage Tips: Store the fudge in an airtight container to keep it fresh. If you’re keeping it for more than a week, consider refrigerating it to maintain its best texture and flavor.
Serving Suggestion: Let the fudge sit at room temperature for about 10 minutes before serving. This slight softening makes the fudge even more enjoyable.
