  • Fill a large pot with water, and salt lightly.
  • Place pot over medium/high heat, and bring to a boil.
  • In the meantime, in a skillet, add olive oil, and place over medium heat.
  • Season shrimp with salt and pepper.
  • When the skillet is hot, add the seasoned shrimp for approximately 2 minutes, flip the shrimp, and cook another approximately 2 minutes, or until the shrimp is opaque.
  • When the water in the pot is boiling, add linquine, and cook approximately 1 – 3 minutes, or until the pasta is firm to the bite, but tender.
  • Place a small saucepan over medium heat.
  • In the small saucepan, add lemon juice, and lemon zest, and bring to a simmer.
  • Add in parsley, and butter. Stirring until the butter has melted.
  • Add in 2 tablespoons of the pasta water and stir to mix well.
  • Using a colander, drain water off of pasta.
  • In a large serving bowl, add the drained pasta, lemon sauce, and shrimp. Stir to mix.
  • Add Parmesan cheese and mix in.
